Sun-dried yogurt that can be grated, crumbled, or blended like a cheese.

One of the oldest forms of dairy preservation in the world. Handmade in small batches by a Bedouin cooperative in the Eastern Mediterranean desert. 

Pure goat and sheep's milk. Salt. Sun. Nothing else.

Also known as jameed or kishk — naturally gluten free.

The result is something deeply tangy, sharp, and concentrated — a focused expression of milk, craft, and centuries of knowledge. Grate it like an aged cheese and it transforms whatever it touches. The flavor of goat and sheep's milk is bolder and more complex than typical cow’s milk cheeses.

Each stone is unique. Every purchase supports a Bedouin cooperative—70% women—preserving this tradition and passing it to the next generation.
