Olives are harvested under cover of night and cold-pressed immediately to preserve their vivid color, bold flavor, and exceptionally low acidity. The result is a dazzling green oil with remarkable depth and nuance.

Midnight Oil is made by Ptora, a family-run producer in Israel’s Lakhish region, where the terroir lends itself to extraordinary olive cultivation. Under the direction of olive oil expert Ido Tamir, Ptora has developed a reputation for crafting oils that are as vibrant as they are rare.

As described by Ptora:
"When the sun goes down, olives are carefully selected and taken immediately to the mill – there the pressing is done in the dark and at an extremely low temperature, in order to preserve the green chlorophyll present in the fruit. This unique way of cultivating olive oil is practiced in only a handful of places in the world and delivers a taste and aroma which are unparalleled."
